NANA'S DIA DE LOS MUERTO'S SLOW COOKER ENCHILADA'S


Sugar skulls, Pan and Marigolds oh my! Dia De Los Muertos isnt just a halloween costume idea, this holiday comes straight from Mexico and is a fun festive day to honor our deceased family and friends! heres a recipe straight from my Nana's kitchen and everything you need can be found at any mexican market or grocery store, i myself found everything at NORTHGATE GONZALEZ MARKET.

INGREDIENTS

2 IBS CHICKEN BREAST

1 TEASPOON SALT 

1 TEASPOON PEPPER

2 BAY LEAVES

1 ONION chopped keep 3 slices to the side for chicken 

2 TABLESPOONS OF CHICKEN BROTH

2 GARLIC CLOVES

12 OZ CAN "LAS PALMAS RED ENCHILADA SAUCE" (MILD)

1 CAN TOMATO SAUCE 

1/4 CUP SOUR CREAM

12 pack of corn tortillas

2 cups of mexican style shredded cheese

1/3 cup of cilantro

15 OZ JAR OF CREMA CON SAL "RANCHERO" BRAND

green onions and bell peppers to garnish as desired

DIRECTIONS

set crockpot on HIGH then prepare chicken breast with salt and pepper , add the chicken broth to crockpot then add in chicken breast, now youre going to add the slices of onion and bay leaves then toss in garlic cloves and let the chicken sit for atleast 3-4 hours.After the chicken is cooked let it cool and shred it into fine pieces

now for the sauce youre going to heat a medium frying pan over medium heat and add in a dash of olive oil and then cook chopped onions until they look translucent , stirring often toss in the enchilada sauce and tomato sauce and let it simmer for a few mins (3-4) add in sour cream and cilantro , you may add salt and pepper to taste and let the sauce simmer for 10 mins

next grab a baking pan and heat oven to 350 degrees, start by cooking tortillas on the stove just enough so that they do not break when you roll them up, next youre going to want to add chicken and cheese to the tortillas and spoon in some sauce , roll up the tortilla and place in the baking pan if you feel like it isnt holding u can secure it with a toothpick. repeat steps until the pan is full , pour sauce over the enchiladas and add shredded cheese and you may add peppers cilantro and onions if desired! 

cover the dish with foil and place the dish in the oven for 20-30 mins , since the meat is cooked you only need to let it sit until the sauce and cheese start to bubble. Now you are all done and just need to let them cool to enjoy GO AHEAD AND GO CRAZY WITH THAT CREMA!!!!!!
