CREAMY SUNDRIED TOMATO BASIL PASTA
This pasta will blow your mind and it only takes 30 mins to make!!!! Very simple sauce but it is BURSTING with flavor! sun-dried tomato, basil and hints of sautéed garlic!!! I'm telling you this dish never gets old, if you want a nice date night dish or just want to impress everyone with your cooking skills but don't really have any than this is the dish for you! INGREDIENTS
~1 tablespoon butter
~2 tablespoons minced garlic
~1 cup sun-dried tomatoes
~2 tablespoons fresh basil (chopped)
~2 cup chicken broth
~2 cups heavy whipping cream
~8 oz dry fettuccini
~salt and pepper to taste
~garlic powder to taste
~2 tablespoons cornstarch mixed with equal parts cold water
DIRECTIONS
In a large saucepan over low heat, melt butter; add garlic and cook for 30 seconds. Add the tomatoes and the chicken broth; increase to medium heat and bring to a boil. Reduce heat and simmer, uncovered, for about 10 minutes or until the tomatoes are tender. Add the cream and bring to a boil; stirring. Simmer over medium heat until the sauce is thick enough to coat the back of a spoon.Now toss in cornstarch mixture and basil stir and turn stove off
Meanwhile, bring a large pot of lightly salted water to a boil. Add fettuccine and cook for 8 to 10 minutes or until al dente; drain, add about a tablespoon of butter for flavor and also to keep pasta from sticking together, toss pasta into bowl pour sauce over the pasta garnish with basil leaf and cheese if desired.
