Cinnamon Apple Streusel Pie


Its almost Thanksgiving and you have so much to be thankful for, including this amazing pie recipe! Thanksgiving in my family is like the Super Bowl of all holidays, its a combination of me losing my mind trying to make 3 dishes at one time , my brother asking if dinner is ready every 15 mins and oh yes, pie of course! Ive been searching for a recipe that is easy enough for a beginner, trust me Thanksgiving is not the day you want to start exploring your inner baker, I've learned my lesson. I'm currently obsessing over this recipe, its topped with a buttery brown sugar and oats crumble, filled with fresh juicy cinnamon apples and held together with a warm flaky crust. I topped mine with vanilla bean ice cream and whipped cream and I'm not sorry about it ! ENJOY

Prep 30 minutes Bake 55 minutes Serves 8

INGREDIENTS

  • 1 prepared refrigerated pie crust

  • 1 1/2 cups packed light brown sugar

  • 1 tsp ground cinnamon

  • 1/2 tsp salt

  • 1/4 tsp ground nutmeg

  • 1/2 tsp vanilla extract

  • 1 3/4 cups all purpose flour

  • 1 1/2 sticks cold unsalted butter, cubed

  • 1/2 old fashioned oats

  • 2 Ibs Golden Delicious apples, peeled cored, and

thinly sliced (about 1/4 inch thickness)

DIRECTIONS

Heat oven to 375. Combine sugar, cinnamon, salt, vanilla and nutmeg. Combine half the sugar mixture (3/4 cup)with 1 1/2 cups flour, butter and oats. Rub the butter into the flour mixture until chunky crumbs form. In a separate mixing bowl combine remaining sugar mixture with sliced apples and and 1/4 cup flour. In an 9 inch pie pan press pie crust and crimp or pleat. Pour the apple mixture into the crust and top with crumb mixture. Bake until golden brown and bubbly, 55 min to 1hr. let it cool and top with whipped cream or vanilla bean ice cream !
