Pumpkin Pie Dip

"Give em pumpkin to talk about!" This pumpkin dip was so easy to make, I made it in about 10 mins. I also added some pumpkin extract it is usually hard to find but if you can find it and add it in more power to you. I made this the night before so its something you can make ahead of time and can store it for up to 3 days.

  • 1 cup of pumpkin puree

  • 1 cup of powdered sugar

  • 1 8oz package of cream cheese (softened)

  • 1 8oz tub of cool whip (defrosted)

  • 2 teaspoons of cinnamon

  • 2 teaspoons of vanilla

DIRECTIONS

  1. Using an electric or stand mixer, mix the pumpkin puree, powdered sugar, cream cheese, vanilla, and group cinnamon until it is smooth and creamy.

  2. mix in cool whip. Cover and place in fridge until ready to serve.

  3. Serve dip with apple slices, strawberries or graham crackers.

Cheesy Meatball Cups

This recipe was my favorite, I love a good appetizer and this one was not only easy but it also looks so elegant. These also taste really delicious with a little chive cream cheese on top. I used turkey meatballs that I bought from Trader Joes and they were a hit!

INGREDIENTS

  • 2 cans of crescent rolls (8 oz)

  • flour for dusting

  • 1 cup of shredded cheese (I used pepper jack)

  • 16 frozen meatballs (mine are from Trader Joes)

  • 1/2 cup garlic spaghetti sauce

  • 1 tablespoon fresh parsley (finely chopped)

DIRECTIONS

  1. Preheat oven to 350° F.

  2. Prepare two muffin tins with (16 molds total) with non-stick cooking spray.

  3. Extend dough on a lightly floured surface. Pull apart dough triangles and press each inside a muffin mold. Covering the bottom of mold and pressing up the sides. Sprinkle each dough cup with 1 teaspoon shredded cheese. Place a meatball on top of cheese, lightly pressing into the dough.

  4. Bake for 10 minutes. Remove from oven and top with 1 teaspoon of sauce and 1 teaspoon shredded cheese. Place back in the oven and bake for 10 minutes more or until dough is golden brown and the cheese bubbles. Serve with a sprinkle of fresh parsley.

Cornbread is a Thanksgiving classic! I love sweet cornbread. I wanted to play it safe so I found this recipe on one of my favorite websites and tried it out, it was fluffy and moist and sooo delicious. This recipe was so easy to make and I had most of the ingredients in my kitchen already so I saved time and money. Definitely serve it fresh with some butter and thank me later.
