Papaya Chia Pudding
The perfect summer snack! Papaya is such an amazing fruit full of antioxidants, which is why I love this recipe, easy to make, dairy free and can be eaten as a grab and go snack for breakfast or lunch snack. This recipe is easy to make and can be stored for 2-3 days. I like to use honey as a sweetener but you can use stevia or any other sugar substitutes. I garnished mine with coconut shreds but don't be afraid to get creative and add granola, fresh fruit or even some nuts for a nice crunch.
Ingredients
2 cups any non-diary milk
2 Tbsp honey, maple syrup or agave nectar
1/3 cup chia seeds
1 tsp pure vanilla extract
1 tsp collagen powder (optional)
I large papaya, deseeded and peeled
2 Tbsp fresh lemon juice and zest of 1 lemon
¼ tsp ground cinnamon
Instructions
Add non dairy milk, chia seeds, honey, vanilla and collagen powder in a mixing bowl and stir to combine. Cover and refrigerate overnight.
Cut papaya into large chunks and place in food processor or blender. Add lemon juice, lemon zest and cinnamon. Process until slightly chunky
Divide equally into 4 serving glasses, ½ papaya mixture, chia pudding,remainder of papaya mixture. Top with chunks of papaya and whatever garnish you would like.
