Roasted Pumkin and Garlic Hummus
perfect addition to a fall charcuterie board or a festive holiday snack!
Ingredients
1 can chickpeas (shell them if you have the time)
1 cup roasted pumpkin or 2 tbsps canned pumpkin puree
5 roasted garlic cloves
2 tbsp tahini
2 tbsp olive oil
1 tsp cumin
1 tsp coriander
1 tsp turmeric
salt to taste
Black pepper to taste
1/2 lemon juice
water to adjust consistency 1/2
pumpkin seeds and paprika as a topping if desired
Directions
start by roasting the garlic cloves with a little oil and salt in the oven or air fryer 5-10 mins in air fryer and 30 mins in the oven.
Cut the pumpkin, place on a baking tray and drizzle with a little oil, salt and pepper. if using canned puree skip this step or you can sub with butternut squash.
add all the ingredients to your food processor and pulse until you get a smooth consistency.
Add some more water to make the hummus a thinner.
