Roasted Pumkin and Garlic Hummus

perfect addition to a fall charcuterie board or a festive holiday snack!

Ingredients

  • 1 can chickpeas (shell them if you have the time)

  • 1 cup roasted pumpkin or 2 tbsps canned pumpkin puree

  • 5 roasted garlic cloves

  • 2 tbsp tahini

  • 2 tbsp olive oil

  • 1 tsp cumin

  • 1 tsp coriander

  • 1 tsp turmeric

  • salt to taste

  • Black pepper to taste

  • 1/2 lemon juice

  • water to adjust consistency 1/2

  • pumpkin seeds and paprika as a topping if desired








Directions


  • start by roasting the garlic cloves with a little oil and salt in the oven or air fryer 5-10 mins in air fryer and 30 mins in the oven.

  • Cut the pumpkin, place on a baking tray and drizzle with a little oil, salt and pepper. if using canned puree skip this step or you can sub with butternut squash.

  • add all the ingredients to your food processor and pulse until you get a smooth consistency.

  • Add some more water to make the hummus a thinner.
